Roast Chicken and Stuffing

Hi Everyone!

On this dreary, hot Sunday afternoon, I roasted a stuffed chicken.  This is an easy meal for a new bride to make with limited cooking skills or someone that wants to make a special meal for their family.  A Roast Chicken is one of the easiest meals to make.  My sister-in-law Gale loves my "Oven Stuffers", so Gale this one is for you! 

You will need the following:

* A Young Chicken or Oven Stuffer

Preheat your oven to 400 degrees.  Oil your roasting pan for easy removal if you're putting you chicken on a platter.

Clean and season your chicken with your favorite seasonings. 

Rub your chicken with oil so that it will cook to golden brown and stay moist.

Add water to your pan.  You may want to add  a little more if you want to make gravy.

Place in the oven for 2 1/2 to 3 hrs. depending on the size of your chicken.

I like to baste my chicken once an hour so that the meat is moist.

Cook until golden brown.  To test your meat to see if it's done, poke the meat with a fork.  If the juices are clear, then it's done.

Let stand for 10-20 minutes and serve!

The Gravy!

Use the baster to suck out the drippings into a separate pan.

Mix flour and water into a mixing cup until smooth.

Add water into the drippings and heat on a low flame.  Mix in the flour and water.  Whisk until smooth.

Season your gravy to taste.
