Mini Quiches

Hi Everyone!

Today I made Mini Quiches for my daughter Brianna's field hockey party that she is attending.  If you want to wow your family and friends, try making these.  Mini Quiches are easy and fun to make.  There are no rules, and for the most part, you can get really creative.  Add your favorite meats or vegetables.  I have made these countless times for my customers, especially around the holidays.  So come one, let's rattle some pans!

You will need the following:

* Ready Made Pie Crust or get adventurous and make your own from scratch
* Eggs
* Milk
* Spinach or Broccoli
* Cheddar Cheese
* Bacon or whatever meat you like
* Salt
* Pepper
* Parsley

Preheat the oven to 400 degrees.

Grease a non-stick mini muffin tin.

Roll out the dough on a cutting board dusted with flour.

Using a small round cookie cutter, or if you don't have one, use a very small glass like a shot glass or champagne flute, to cut out the dough. 

Place the dough in the tin and then in the oven for about 2-5 minutes.  I bake the dough so that it's not "doughy" when chewing. 

Season and cook your meat before adding to the quiche.

Remove and then start adding your filling.  I like to add my veggie first, then the meat and top it off with the cheese.

In a measuring cup, use a cup of milk, 2 eggs, salt and pepper.  Beat together thoroughly.

Pour the mixture into each muffin slot.

Place in the oven for about 15-20 minutes or until golden brown.

Remove from the oven and let settle for 5-10 minutes.

Remove the quiches from the tin with a butter knife carefully and place them on a serving platter.

Your guests will go wild!
