Steak Fajitas - July 19, 2011

Hi Everyone!

Today's theme is Mexican.  One day Phillip and I took the kids to Applebee's.  Phillip and our daughter Brianna ordered Steak Fajitas.  We heard the sizzling of the entrees as the waitress approached our table.  I looked at the ingredients and I said to myself, "I can make that!"  So one day, I did, and my family raved about it.  Now the kids ask for Fajitas for dinner frequently.  Fajitas are fast and cheap to make.  It's a good nutritious meal to serve after you have worked all day, and you need to get something decent on the table.  What's good about Fajitas is that you can get creative and add your favorite meat and veggies.  Let my ingredients be a guide for you.

I use the following:
* Steak, but you can use chicken, shrimp or your favorite fish.
* Tortillas (not shown in the photo)
* Onions
* Peppers
* Mexican Rice
* Sour Cream

Start your rice first.  That way it can take its' time cooking while your preparing the meat and veggies.

Grill or pan fry the steak.  Add a little oil to prevent sticking.  I like to use the steak fillets that I talked about in my Steak Salad entry.  They are inexpensive and very tender.  Add your favorite seasonings to the steak as it's cooking.  Don't forget your meat tenderizer.

While your steak is cooking, cut up your onions and peppers and prepare to fry those as well in a seperate pan.  I hate peppers, but I like to use red, yellow or orange peppers to make the dish more colorful.

After all of your ingredients have been prepared, serve them on a platter with spoons so that everyone can serve themselves.  Don't forget the sour cream, cheddar cheese and whatever else you would like to enjoy in your tortilla.  Spoon the ingredients onto a flat tortilla. 

Wrap the tortilla and enjoy!

Here's a tip, warm the tortillas in the microwave for about 20 seconds before serving.

This dish can also be used at a party.
