Fried Catfish Po Boy Sandwiches are one of our favorite Friday or Saturday night meals. I don't recommend this meal during the week because it can get a little involved after a long day at work. Catfish is one of my favorite fish because it's meaty and has very little or no bones. When I am hungry, I do not want to pick through bones, so let's get started.
You will need the following:
* Catfish Nuggets (Nuggets are cheaper than fillets)
* Bread Crumbs
* Egg
* Salt
* Pepper
* Your favorite seasoning salt
* Oil (Use your favorite)
Wash and season your fish.
Heat your oil in the pan.
Beat 3-4 eggs for your dip. I add a little seasoning to the egg as well as the fish.
Pour your bread crumbs into a separate bowl.
Dip the fish in egg and the coat it in the batter. Place your fish on a separate dish before adding to the pan.
Once the fish has been breaded, add to the pan and cook until golden brown on both sides.
Remove from the pan and let cool.
In the picture, you'll notice that the fish has a topping. It's called Shrimp Remoulade Sauce. If you don't want to make it, top with Tartar Sauce. Toast Roll and serve with your favorite side.
