Hi Everybody!
I have had a busy night running my kids from point A to point B and I had to put something together for dinner fast. Tomorrow is my hair night, and this dish is going to be great for leftovers. It's called Chicken Tettrazini. Believe it or not, I found this recipe in Ebony magazine many years ago and put my own spin on it.....and you can too.
You will need the following:
* Chicken Breast
* Rotelle Pasta
* Parmesan Cheese
* Light Cream
* Chicken Broth
* Broccoli
* Mushrooms
* Butter Florets
* Flour
Preheat your oven to 425 degrees and grease your favorite baking dish.
Clean, season and cut the chicken into cubes. Cook your chicken on the stove until done.
Add a can of chicken broth and a quart of light cream to the pan of chicken and stir.
Add 2-3 scoops of butter and continue to stir.
Let the mixture simmer before adding broccoli florets and mushrooms.
Mix 3 tablespoons of flour with water until smooth. Add to your mixture to give it a thicker consistency.
Let simmer while stirring.
Spoon in a layer of Rotelle pasta, add the chicken mixture over the pasta, then add a layer of Parmesan cheese. Continue this process until you have 3 layers.
Let bake for 30-40 minutes or until golden brown.
Allow this dish to stand for 10-15 minutes before serving.
