Chicken Madeira - July 28, 2011

Hi Everyone!

How many people love The Cheesecake Factory?  I am raising both hands!  My favorite dish is the Chicken Madeira.  The nearest Cheesecake Factory to me is over 20 miles away.  So after eating this meal for the 5th time, I set out to try and re-create this dish.  I found the recipe in a book about what else....restaurant recipes.  I didn't follow it to the letter, but I used it as a guide.  If you want to try something different for the family, this is a good weekend meal. 

The ingredients are as follows:

* Chicken Breast
* Madeira Wine
* Sliced Mushrooms
* Asparagus
* Beef Broth
* Olive Olive or whatever you have
* Butter
* Mozzarella Cheese

Add oil to pan along with seasoned chicken breast.  Cook until brown on each side.  Remove from the pan.  Set aside while you're making the Madeira Sauce.

In the same pan, add a little olive oil.  Then add your sliced mushrooms.  Use as many or as little as you like.  Saute' the mushrooms. 

Now, add 1 can of the beef broth, 1 scoop of butter and as much or as little of Madeira Wine as you want.  Whisk until ingredients have been combined.  Let simmer for approximately 20 minutes until sauce thickens.  If your sauce does not thicken, combine flour and water in a cup.  Mix until smooth and add to your sauce.  Whisk your sauce until smooth.  I like my sauce a little thicker.  If you want it thinner, skip the flour.  Salt and pepper to taste.

While your sauce is simmering, boil the asparagus in salted water for about 3 minutes.  Rinse with cold water so it doesn't get soggy.

Turn your oven on broil. 

Arrange your chicken breasts in a greased dish.

Place asparagus on top of the chicken breasts.  Then top with mozzarella cheese.

Place in the broiler until cheese has melted and is golden brown.

Top with the Madeira Sauce.

This dish is best served with mashed potatos.
