Phillip has done it again! One Friday night, Phillip was preparing grilled steak as he has done many times before. Well, instead of having a boring baked potato, Phillip decided to jazz it up a bit, while keeping it simple.
Phillip used the following:
* Red Skin Potatoes
* Red Onions
* Diced Green Peppers
* Red Wine
To speed things up, Phillip put the potatoes in the microwave until thoroughly cooked.
He then sliced up onion and pepper and sauteed them in olive oil.
Pour in about a 1/4 cup of red wine and continue to sautee'. Lower the heat and allow to simmer for about 5-10 minutes. Continue to mix. Season to taste with salt and pepper.
Slice the potato and then pour the wine sauce over the potatoes.
Serve with your entree' and enjoy!
