Loaded Mashed Potato Bake

Hi Everyone!

Is there anyone out there assigned to bring a dish for Thanksgiving?  Well, here is a simple dish to make that will wow your friends and family....Loaded Mashed Potato Bake.  So let's get started.

You will need the following ingredients:

* Red Skin Potatoes, but if you're in a hurry, instants will do fine.
* Cheddar Cheese or your favorite cheese, i.e., Monterey Jack, Colby
* Bacon
* Onions
* Parsley
* Salt
* Pepper
* Cream Cheese
* Milk
* Butter
* Bread Crumbs

Preheat your oven to 400 degrees.

Boil 5 to 6 cubed potatoes until tender in salted water.  Like I said, instants will work if you are in a hurry.

While your potatoes are boiling microwave or fry the bacon.  I used 6 strips.  Once done, place the cooked bacon on paper towels to drain.

Once the potatoes are done, drain and rinse. 

Mash the potatoes in a large mixing bowl.

Add about one cup of milk and 2-3 scoops of butter.

Stir until smooth.

Toss in the cheese and continue to stir.

Season with salt and pepper to taste.

Add the parsley as well and continue to stir.

In a greased baking dish, fold in the potatoes.

Crumble the bacon on top of the potatoes.

Top with bread crumbs and bake for about 20-30 minutes, or until golden brown.
