Here's another classic turkey leftover recipe.....Turkey Noodle Soup. When you are just done with turkey, here is a great way to strip the turkey of all its' meat, and use it for something different. It only took 1 1/2 hours or less to prepare this soup. You can use the same recipe with chicken. This soup can be frozen for a future cold day when you're snowed in and you need to thaw out with some hot soup.
You will need the following:
* Turkey
* Turkey Drippings
* Chicken Broth
* Rotelle Pasta
* 4 Potatoes
* Carrots
* Corn
* Stewed or fresh tomatoes
* Onion
* Celery
* Mushrooms
* Fresh Spinach
Scoop out any remaining drippings from your roasting pan. Add them to your large pot.
Pour in a large can of chicken broth. You can add some water to stretch your broth. Place on the stove and bring to a boil.
While your broth is boiling, cut up your potatoes and carrots. Add to the boiling broth.
Begin boiling your pasta for the noodles.
Cut up the spinach and it to the pot. Stir to distribute your ingredients.
Now gradually add in your tomatoes, mushrooms, corn, onions, celery. Continue to stir and allow to simmer.
Add the cooked pasta to the pot after draining. Continue to stir.
Season to taste, add parsley and serve.
