Shrimp Remoulade Sauce

Hi Everyone!

Sometime last month, I profiled a Catfish Po Boy Sandwich topped with Shrimp Remoulade Sauce.  Well, I neglected to give the recipe for the sauce which is rich and out of this world.  If you are trying to watch your waistline, then this is not the sauce for the you.  It is simply awesome!   Make your dish extra special by serving this sauce.  When I have sold this sauce to ny customers, they have told me that it is good enough to eat alone.  So, without further adieu!

You will need the following:

* Mayonnaise (I'm a Hellman's girl)
* Ketchup
* Shrimp
* Celery
* Dill Weed
* Worcestershire Sauce
* Hot Sauce

Scoop 2-3 heaping tablespoons of mayonnaise into a mixing bowl.

Add about a 1 tablespoon of ketchup

Season and saute shrimp until done.  Let cool and then chop up into small bits.  Some people like to puree the shrimp for a fine texture.  I like small bite size bits.  You can do whatever floats your boat.

Chop up a little celery.

Sprinkle dill weed.

A dash of Worcestershire Sauce

A dash of Hot Sauce

Combine your ingredients in a bowl thoroughly and serve as a topping on fish, crab cakes, etc.
