Fast Once Baked Potatoes

Hi Everyone and Happy Easter!

Today's Easter meal consisted of Prime Rib, Fried Cabbage and "Twice Baked Potatoes".  My co-worker Emily told me that she tried these and they came out great.  So I thought that I would try making them as well.  Emily was right they were really good. 

I used the following:

* Red Skinned Potatoes
* Butter
* Cream Cheese
* Bacon
* Red Onions.....yellow will do as well
* Salt
* Pepper
* Chives (Parsley will do as well)
* Cheddar Cheese
* Bread Crumbs

This dish can be made during the week.  It did not take long to make these at all. 

Wash and microwave your potatoes.

Cut the potatoes in half and scoop them into a bowl.  Be careful so that the skin is left in tact.

Mash the potatoes.  Add in the butter, cream cheese and chopped onions.

Microwave 1 piece of bacon for every 2 potatoes.

Spoon the mixture back into the potatoes.

Top with cheddar cheese, crumbled bacon and bread crumbs.

Bake at 350 degrees for about 15-20 minutes in a baking dish.
